TWIN FALLS, Idaho (KMVT/KSVT) - There is something to “taco-bout.” A food truck in the Magic Valley is cooking up Mexican favorites with their own family twist.

“So this was one of my dreams,” Katrina Martinez said.

Katrina and Emilio Martinez opened Tacos El Guey a couple years ago, and they did for a pretty amazing reason.

“My son got cancer and he said if he gets cured he’s like ‘mom we’re going to get a taco truck’ and I’m like ‘you’re going to get cured.’ He’s cured and low-and-behold,” Katrina explained.

Now living her dream, Katrina and her family are serving up all kinds of tacos around the Magic Valley.

She says what makes their tacos special is that the recipes are rooted in tradition.

“They were handed down from our nanas, they were handed down from my grandma and his,” Katrina states.

Emilio’s grandma even gave him a special recipe that gives their new Adobada Taco or Taco Al Pastor a unique taste, “It’s my grandmas recipe all the way from Zacatecas. She taught me all the ingredients.”

The Taco Truck is run to get customers in and out and still have that homemade flavor.

“You want the homemade food, you want the homemade tortillas, you want the homemade frijoles. You want to enjoy that homemade food,” Katrina said.

While they serve up favorites like carne asada, you’ll also find things like the Taco de Papas, or Potato Tacos.

The Taco de Papas mixes two different cultures together, ”Because he’s from Zactecas and my family is from Texas and Chihuahua I put a mix to it. We put our secret ingredients in it. We top it with cabbage cheese and sour cream and then we throw our lily sauce on it,” Katrina explained.

With a growing population of Mexican immigrants, Katrina said she wants her food truck to help people feel more comfortable in a new community, “It’s a home thing for them you know what I mean, it’s a way to feel at home.”
